There is a variety of Easter dishes depending on a region of Poland. All Easter meals contain lots of eggs, ham, vegetable or potato salad and horseradish sauce. For dessert there is babka wielkanocna and mazurek (sweet cake). My mother's family come from Silesia (Southwestern part of Poland). In Silesia the main dish is horseradish soup. I recommend you to try. The recipe is below: Horseradish soup 2-3 roots of horseradish depends on the size ham or bacon, 0.5 lbs 1/2 l milk 2 tablespoons of flour 2 eggs Polish sausage Preparation: horseradish roots grate on a fine grater. This is the most unpleasant part. Horseradish is like an onion and it causes tears in the eyes. You can do it on the balcony or in front of the entrance door so that the substances that cause tears would go away. In the same time cook a ham or bacon in 2 l of water for 1 hour. Remove ham and bacon from the pot but pour grated horseradish to the pot. Boil horseradish one minute and add the mixture prepared from 2 mixed eggs added to 1/2 l of milk and 2 tablespoons of flour. Boil two minutes and strain the soup from horseradish pieces. After that add pieces of Polish kielbasa into the soup. Distribute to the plates and add hard-boiled egg to each plate. Horseradish root with the grater Update: instead of simple grater you can use a food processor, see the picture below. In the food processor we was able to grate the horseradish into finer pieces than with the simple grater. It tooked less time and it was less painful. When you use a food processor for grating, use less horseradish root. When we did our horseradish soup the first time using a food processor, the soup was extremely hot (aromatic), almost bitter! Since the horseradish was grated finer with the food processor than with using a regular grater and I used the same amount of the horseradish root to grate.
